Hi Everyone today were going to a cook our version of yang chow fried rice. This is a simple and easy way to level up your leftover rice.

Yangchow Fried Rice

Ingredients

  • 2 cups Rice left over
  • 2 tbsp cooking oil
  • 4 slices Luncheon Meat Ma Ling
  • 1 piece onion small
  • 3 piece carrots small
  • 2 stalks spring onion
  • 2 piece eggs
  • 1 tbsp soy sauce

Instructions

  1. Beat the eggs and set aside. Then, cut the luncheon meat into cubes. Do the same for the carrots but cut them into smaller cubes. Chop also the spring onion and onion.

  2. Heat a small amount of oil in the pan and once the oil is hot enough, pour in the beaten eggs. Remove from the pan and set aside.
  3. Add a small amount of oil in the same pan then fry the luncheon meat until brown. Then add the onion and stir for 2-3 mins until the onion is fragrant. Add the carrots and stir for another 2-3 mins.
  4. Add the left over rice and soy sauce. Mix until the soy sauce is well blended with the rice.
  5. Add the egg and mix for 2 mins. Give it a taste and season with salt if necessary.
  6. Lastly add the spring onion and mix until all the ingredients are well blended.
  7. Enjoy!
