This Filipino Food should be in your recipe arsenal. Beef Caldereta is a tomato based dish that is packed with lots of flavors. there is One Special ingredient that you must never miss out to level up this caldereta recipe.
- 1 Kilo Beef
- 2 Large Onions Chopped
- 6 Cloves Garlic Minced
- 250 grams Red Bell Pepper Cut
- 2 Medium Potato Cut
- 3 Medium Carrots Cut
- 6 Ounce Tomato Paste canned
- 2 pcs Bay Leaves
- 2 pcs Birds Eye Chili chopped
- 250 grams Chicken Liver
- 20 pcs Olives
- 1 cup green peas
- 1/4 block cheese
- salt depends on preference
- pepper depends on preference
- sugar depends on preference
Simmering the Beef
put a small amount of oil in the pan and once the oil is hot enough put the beef one at a time and do not overcrowd the pan after browning set aside.
saute the onion and garlic then add back the beef
add the tomato paste bay leaves and around 2-3 cups of water stir until the ingredients blend well with each other simmer for 2 -2.5 hours
While Beef Is Simmering
Brown the vegetables starting from red bell pepper ,potatoes and carrots. this will release the natural sugar of the veggies making it a lot more richer in taste.
Put the chicken liver in boiling water and cook for 1-2 minutes,do not overcook as it will make the liver "tough"
mash the chicken liver until it become paste like texture, set aside
After Beef is Simmed
After simmering for 2.5 hours, the beef should be fork tender (press it with a fork)
once the beef is tender, add in the veggies and cook for 8-10 minutes
add the salt,pepper and sugar and taste for preference.
add the pasted chicken liver
finally add the grated cheese for a deeper salt flavor
