Bibingka with Cheese
- 1 egg
- 1/3 cup sugar
- ¾ cup coconut milk
- 2 tbsp melted butter
- ¼ cup water
- 1 cup glutinous rice
- ¼ cup rice flour
- 2 tsp baking powder
- ¼ tsp salt
- Banana leaves
- Cheese and salted egg for toppings
Combine egg, sugar, coconut milk, melted butter and ¼ cup water. Mix well.
Sift glutinous rice, rice flour, baking powder and salt into the wet ingredients. Mix altogether.
Set aside the mixture and prepare the banana leaves lining.
Clean the banana leaves then run over fire to make it pliable.
Cut the banana leaves according to the mould size
Fill each mould with bibingka batter. Fill halfway to leave room for the batter to rise.
Preheat the oven. Bake the bibingka in 200C for 15 mins.
Do a toothpick test to check if the bibingka is cooked. If the toothpick comes out clean, it is cooked.
