  • 1 large onion chopped
  • 5 cloves garlic minced
  • 1 large tomato seeds removed and chopped
  • 3 pcs long green chili chopped
  • 1 eggplant soak in water to prevent oxidation
  • 600 grams pork shoulder butt
  • 3 tbsp shrimped paste
  • 3 tbsp vinegar
  • 200 ml coconut cream
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp pepper


  1. Put some oil in the pan, then sauté the garlic, followed by the onion.
  2. Add the pork and let it brown. This will take around 5 to 6 mins each side.
  3. Add the tomato and mixed it up. Once the tomatoes are soften, add the shrimp paste and mix it up to distribute the flavors equally.
  4. Add around 1 cup of water and bring to boil. After few minutes, add the coconut cream. Cover and simmer in low heat for 20 mins or until the pork is tender.
  5. Add the eggplant and cook for another 10mins.
  6. Finally, add the chili, sugar, pepper and salt. Mix it up to distribute the condiments equally. You can add around half cup of water if the sauce becomes too thick. Simmer for another 3-4 mins until you get the right sauce consistency.
