Cheese Cupcakes

Cheese Cupcakes

Course Snack

Ingredients

  • 1.5 cups all purpose flour
  • 1.5 tsp baking powder
  • ½ tsp salt
  • ½ cup butter 110 grams, room temp
  • 1/3 cup sugar
  • 2 eggs
  • 1 can of condensed milk
  • 1 tsp vanilla
  • 1 cup of grated cheese

Instructions

  1. Preheat the oven to 175C for 10 mins.
  2. Sift all purpose flour, baking powder and salt. Mix then set aside.
  3. In another bowl, combine the butter and sugar. Using a mixer, cream the butter and sugar in medium speed for 3 mins or until the butter becomes pale yellow.
  4. Add the eggs one at a time. Mix.
  5. Add the condensed milk. Mix
  6. Gradually add the dry ingredients then mix.
  7. Add 1 cup of grated cheese then gently fold in the batter.
  8. Scoop batter in the muffin cup up to ¾ full leaving space for the batter to rise.
  9. Top with cheddar cheese.
  10. 10. Bake for 175C or 350F for 20-25 mins.
  11. 11. Do a toothpick test to check if the cupcakes are fully cooked. Insert a toothpick in the cupcake; if it comes out clean, the cupcake is cooked.
