Today were going to cook a recipe perfect for a rainy weather or if you are just craving for a soupy dish – Creamy Chicken Macaroni Soup.
Creamy Chicken Sopas
- 2 cup elbow macaroni
- 200 grams chicken breast sliced
- 4 cloves garlic minced
- 1 medium size onion diced
- 1 pc carrot diced
- 200 mL evaporated milk
- 2 tbsp butter
- 1/2 chicken cube
We’re going to use a large pot to cook our Chicken Macaroni Soup. Melt the butter in the pot in low medium heat. Then add the garlic, stir until fragrant then add the onion. Once the onion is translucent add the chicken.
Add more chunks of chicken if you feel that the chicken breast is not enough. Stir for 1-2 mins then cover and cook the chicken chunks for 2-3 mins.
Add the carrots and mix well with the rest of the ingredients.
Add around 500 mL of water, cover and bring to boil. Add the chicken cube and elbow macaroni. Stir and let all the macaroni submerge in water. Then cover again and simmer for another 6-7 mins until the macaroni is cooked.
We prefer the macaroni to be slightly on the softer texture so we simmer this for additional 2 mins.
Lower the heat then add the milk. Then, season with salt and pepper. Stir and bring to boil for 30 seconds so the flavours are well blended.
Taste the soup if it needs additional seasoning. Turn off the heat and it’s done!
