Crispy Calamares

calamari

Calamares is the Filipino version of the Mediterranean breaded fried squid dish, Calamari. We will soak the squid in milk which helps tenderize the squid while adding a touch of sweetness, the only indication of milk.

Ingredients

  • 350 grams Squid
  • 1/2 cup Milk
  • 1/4 cup Flour
  • 1/4 cup cornstarch
  • 1 tbsp garlic powder
  • 1 tsp salt

Instructions

Cleaning the Squid

  1. Pull out the head of the squid and remove the plastic like cartillage.

  2. Cut the head just after the eyes, then remove the beak.

  3. For the body, remove the thin skin by gently peeling it from the body

  4. Then cut the squid with around half a centimeter thickness

Preparing & Cooking

  1. The next step is to soak the squid in 1/2 cup milk for 2 hours

  2. The acid from the milk will help tenderize the squid,After 2 hours, strain the squid.

  3. In a bowl combine 1/4 cup flour and 1/4 cup cornstarch, the sieve. Add 1 tbsp of garlic powder and 1 tsp of salt. Mix thoroughly

  4. Generously coat the squid rings with the flour mixture

  5. Cook the squid for 1-2 mins each side. Until it looks brown and crispy.
