Filipino Bulanglang Recipe (Vegetable Stew)

bulanglang batangas

Bulanglang is a Filipino vegetable stew with ingredients similar to pinakbet. The difference is the way of cooking. Bulanglang is normally boiled in rice washing with no oil use in cooking while pinakbet is sauted in onion and garlic and uses shrimp paste. They are both good in their own way but if you want to have a break from oily food then bulanglang is for you.

– 500ml rice wash (taken from the 2nd washing

– 1 cup squash

– 1 cup long beans

– 6 pcs okra

– Green leafy vegetable (any type will do)

– 1 large tomato

– 1 Thumb size ginger

– 4 cloves of garlic

– ½ cup of dried dilis or anchovies (optional)

  1. Roast the dried dilis until crunchy. Set aside. We will use this later. This will add flavor to the vegetable. But if you do not prefer the fishy taste, you can cut this out.
  2. Pour in the rice washing in a pot. Add the tomato and bring to boil.
  3. Once the tomato soften, add the string beans. Cover and cook for 2 mins.
  4. Add the squash, ginger and garlic. Cover and simmer for 3-4 mins until the squash is cooked. Add the okra and the green leafy vegetables. Season with a bit of salt. Then add the dried dilis.

Bulanglang is a very simple dish yet it has the sweet natural flavor coming from the variety of vegetables. It is commonly partnered with rice and fried fish or meat. Enjoy!
