  • 1 pc pork leg this is around 1 kg
  • 6 cloves garlic crushed
  • 1/3 cup soy sauce
  • 1 cup pineapple juice
  • 2 tbsp brown sugar
  • 2 tsp peppercorn
  • Salt if only necessary
  • Pineapple slices for decoration


  1. Cooking this dish is easy but requires prolong simmering because we want the pork to be as tender as possible.
  2. In a pot combine the pork, garlic, pepper, sugar, soy sauce and pineapple juice. Then add 2 cups of water.
  3. Mix it up until the sugar is fully dissolved then cover and bring to boil in medium to high heat.
  4. Once it starts to boil, put the heat to low and continue to simmer for 1 hour or more until the pork fat becomes super soft and got a melt in your mouth texture.
  5. After 1 hour of simmering, it will look like this. The liquid was now reduced and thickens.
