Kare Kare is mostly served during special occasions such as birthdays, graduation or fiesta. It is very good to have it in your cooking arsenal this unique Filipino staple dish.
I normally use pork knuckle as it is one of the most flavorful part of the pork. however, you can also choose whichever part you prefer. this is best partnered with warm rice and shrimp paste for dipping.
Kare Kare Baboy
- 1 1/2 Kilo Pig's Pront knuckle
- 1 Medium Onion
- 5 Cloves Garlic
- 7 Pcs String beans
- 2 bunch Spinach
- 2 medium eggplant
- 3 tbsp annatto oil
- 1 cup peanut butter skippy
Simmering the pork
Give the pork knuckle a blanch to remove the impurities. Boil for 10 minutes then drain.
Fill again the pot with water and simmer the pork for 45 minutes using medium heat
Simmer again for 30 minutes if the pork is not yet tender
Preparing the sauce
once the pork is ready, you can prepare the sauce
put the anatto oil in the pan, then saute the garlic and onion.
once aromatic, put the pork knuckle in the pan and let it absorb the flavors by cooking it for 1 minute.
add 2 cups of pork broth then bring to boil
add some of the peanut butter and mix well
add more pork broth if necessary, just make it so that there is enough broth for the veggies. add again some peanut butter and check the texture it should have a thick consistency
add the eggplant and string beans first as they are harder to cook. wait for 10 minutes.
once they are cooked, add the spinach
season with salt to taste
