Hi Everyone. Welcome back to Foodie Pinoy. Today, were going to cook a spicy appetizer – lumpia dynamite.
- 9 pcs long green chili
- 250 grams minced pork
- 4 cloves garlic minced
- 1 small onion minced
- ½ tsp salt
- ½ tsp pepper
- 1 Cheddar Cheese strips
- 1 pc small carrot cut into small size
- 10 pcs Lumpia wrapper
First were going to remove the seeds from these chilies. We will stuffed these chilies with cooked minced pork and cheese later. Just slit the chili from head to tip and a bit of slit on the top part to easily remove the seeds. Seeds are hottest part of the chili so were going to scrape all of it or you can leave some if you prefer this to be hot. Removing the seeds will also make more room for the meat and cheese. Set aside for a while. The next step is to cooked the minced pork.
Heat a small amount of oil in a pan. Once the oil is hot enough, saute the garlic, stir until fragrant then add the onion. Stir until the onion turned slightly brown then add the minced pork. Mix it up then season with salt and pepper. Cook for 5-6 mins until the meat is tender. Lastly add the carrots and cook for another 2 mins. As much as possible the liquid must be completely reduce. Set aside and let this cool in room temperature.
Lay flat the lumpia wrapper in a clean plate. Then stuffed the chili with cheese and minced pork. I use shredded cheese because this is what I have in the fridge and it is about to expire soon. The normal block of cheddar cheese will do just slice it to a size that will fit inside the chili.
Then wrap it with a style by leaving the other end open. This is very challenging to wrap because of the chilis uneven shape. Don’t worry if you wrapped it imperfectly, it will compress and will look appetizing after we fry it. Repeat the steps with the rest of the chilies.
In a medium heat, Place oil in the pan enough to fry our lumpia dynamite. Once the oil is hot enough, carefully the place the lumpia one by one but do not overcrowd the pan.
Cook for 3-4 mins each side or until the lumpia dynamite turns golden brown.
Once done with the frying, place in a paper tower to let the excess oil to drip off.
And its done! This is Best serve with catsup or sweet chili sauce and of course share with friends. Enjoy!
