Mang Inasal Chicken using Air Fryer

For the Marinade

  • 2 cloves garlic
  • 1/2 thumb size ginger
  • 1 stalk lemon grass
  • 1/4 cup soy sauce
  • 2 tbsp vinegar
  • 2 tbsp brown sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper

For the Garlic oil

  • 2 tbsp annato or atsuete seeds
  • 1/2 cup olive oil
  • 2 cloves garlic

For the Meat

  • 2 Pcs chicken legs


Marinading the Chicken

  1. Combine all the Ingredienst for the Marinade and Mix well

  2. Score the chicken legs so that the marinade can penetrate deeper.
  3. Put the chicken in a plastic bag and pour in the marinade
  4. Seal the plastic bag and store in the fridge for 5 hours.

Cooking the Chicken

  1. Were using air fryer to cook our chicken.
  2. Put the chicken in the air fryer and set the temperature to 200 degree C and the timer to 15 mins.
  3. While waiting for the chicken to cook, we can start to make our annato garlic oil

Cooking the Annatto garlic

  1. Set the stove to low medium setting and pour in the oil.
  2. Once the oil is hot enough, add the atsuete seeds.
  3. Reduce the heat to low and continue to stir until the color from the annato seeds come out. Do this for 2-3 mins.
  4. Separate the seeds from the oil using a strainer. We will use some of the oil for basting the chicken later.
  5. In the same pan, pour in around 2 tbsp of annato oil then immediately add the mince garlic. Do not wait for the oil to get hot because hot oil will immediately burn the garlic.
  6. Stir continuously until the garlic become aromatic. This will take 1-2 mins.
  7. Immediately remove from the heat to prevent the garlic from burning

Returning to cooking the Chicken

  1. Baste the chicken with annato oil to achieve the glistening orange color.
  2. Cook for another 5 mins.
  3. Enjoy!
