Puto Pao with Pork Asado Fillings

This is our version of puto pao! This puto version filled with asado (pork) is a good afternoon snack paired with coffee or hot milo.



Puto Pao with Asado Fillings

  • 1 medium onion
  • 3 cloves garlic
  • 250 grams pork shoulder or kasim
  • 1/4 cup brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tsp cornstarch
  • 1/2 tsp pepper


Preparing the Filling

  1. Put some oil in the pan then saute the garlic followed by the onion
  2. Add the pork then brown on all sides.
  3. Add the soy sauce, oyster sauce and brown sugar
  4. Give it a mix then add the pepper
  5. Add 1 cup of water and let it simmer for 45 mins or until the pork is tender. let it cooldown.

Making the Mixture

  1. In a bowl, sift 2 cups of all purpose flour and 2 tbsp of baking powder
  2. Add 1/2 cup of sugar
  3. 3/4 cups of water and
  4. 1/2 cup of fresh milk
  5. Using fresh milk will give us a whiter puto compared to using evaporated milk
  6. Give it a good mix until all ingredients are combined and free from lumps
  7. Set this aside for a while
  8. In another bowl, separate the white and yellow part of 4 eggs
  9. Using an electric mixer, beat the egg whites until it forms soft peaks
  10. Add 1/2 cup of sugar and continue to beat for another 1 min until the sugar is fully incorporated
  11. The next step is to combine the egg white mixture and batter.
  12. Fold the egg white into the batter until they are fully incorporated

Assembling the Pao

  1. Our filling is now cool enough to handle. But before we arrange our puto pau, shred first the pork so it will have a pulled pork texture.
  2. Line the puto molds with cupcake liners. If your not using cupcake liners, make sure to grease the moulds so the puto can be easily removed in the moulds
  3. Fill each puto moulds with 1 tbsp of puto mixture
  4. Then add 2 tsp of pork filling
  5. Fill it up again with puto mixture
  6. Then top it up with salted duck egg and cheese

Steaming the Puto

  1. Boil around 3-4 cups of water in the steamer. Once ready, place the puto pao and steam in medium heat for 15 mins.
  2. Once done, remove from the steamer and let it cool
  3. Enjoy!
